Chicken Spiced Rice(made student style)

    Today I was a bit bored so decided to do my usual studenty thing of throwing everything I could find in a pot and hoping for the best. Ended up with something very similar to those Uncle Ben's Mexican rice sachets that you do in the microwave.

    What I used :
    3 chicken breasts, marinaded by the supermarket
    Rice
    Water
    Spices(cajun sauce, lemon pepper, an all purpose grilling spice, all purpose salt and herb mix)
    1 Yellow pepper
    1 Red pepper
    1 tin chopped tomatoes(drained)


    I threw in the spices in random amounts
    Chop up the chicken and stick in the pot with enough water to cover it
    Let it boil for a bit then throw in the rice and peppers
    Boil for a bit longer then throw in the tomatoes
    Cook until rice is done and the chicken is fully cooked

    Add in more spices if you feel like at any stage and add water as needed

    Eating it now with a green salad with some chopped peppers and it is damn tasty, if I do say so myself. Next time I think I'll throw in more peppers though and maybe an onion.

    Maybe try cooking the chicken less.

    When I was a student, we didn't have fancy spices or coloured peppers...!
