For me, Sandy Denny does the best one. It's a home recording version on her box set 'Boxful of treasures'. Sounds like it was recorded down a well. Anybody I know thinks it's the best version. I can't find it online, so if you want to hear it, PM me and I'll send. (I own the set).

Loreena Mckennitt does a really nice, more polished version too.
