Can onions be eaten at any stage of their maturity?

Ive a small garden and was thinking of sewing onions close together and pulling every second one when they are half grown to give space to the balance to mature fully.

    Is this a good idea?
Do they taste odd when half grown?

When half grown they are pretty much the same as scallions.
    Still tasty.
