My Mate has this phone on Meteor . . Is there anyway of turning down the brightness . , Went into settings display and cant find anything

Generally for nokia's, the screen brightness is under the display category in personalisation. It should be named 'light sensor' and you can set it to minimum or maximum. I haven't got a 7310 with me at the moment but if this doesnt work for you, let me know and i will check a 7310 tomorrow.
