Potato skins

right lately ( once a week or so ) I seem to be using potato's for chips but iv been left over with the skins looking at them thinking they could be used for something nice im sure . I'm not scooping them out so they usually end up shredded. Is there anything I can do with them ? For a bit of a side. Preferably without…

you can put them in soups and stews

or roast them, as crisps

Why not make wedges instead of chips? That way there'll be no wastage.
