Healthy topping for carrot cake?

    Hi all,after lots of attempts I've finally found and mastered a lovely carrot cake receipe. Only problem is the topping (that is delicious) is a full on icing sugar one.

    Anyone suggest a healthy one,Ta loads:)

    Perhaps a yoghurt based one? If you could thicken it and then chill it in the fridge...im sure someone could suggest a way to do this. Im useless at baking - sorry!

    Are you looking for a low sugar topping? Carrot cakes are usually sweet enough that you don't need much sugar in the topping. If you're talking about a icing sugar & water icing, then that's too sweet.

    Conventional carrot cake toppings usually contain cream cheese, butter, some icing sugar, and lemon juice. You could also use whipped cream or creme fraiche in place of the cream cheese and butter. Or buy a low fat flavoured yoghurt and weakly set it with some gelatin, similar to panna cotta, but not using cream. That will stabilise it somewhat.

    I wouldnt consider anything artifical to be healthy but in moderation like alot of things it shouldnt kill you.

    Maybe not as healthy as your looking for, but dam tasty!

    250g philly
    40g melted butter (unsalted)
    150g icing sugar (can cut back on this)
    lemon zest
    5ml lemon juice

    Mix the philly and melted buttrer, add the icing sugar and once combined, add the zest and juice.Apply to cake and :pac::pac::pac:

    ^^thats enough for a 13x9 carrot cake.
