    In singapore noodels what is the ingredient that seems to be thinly shreded white and dark in places.

    could be pork belly different places use different ingredients

    Yeah, chicken or pork usually, possibly beef too. I reckon most places will strip chicken breasts for chunky dishes. Then you have the darker meat like leg & thigh going into shredded dishes.
