storing/freezing fresh yeast

    I got some fresh yeast in Cork today.
    How long does it keep in a fridge?
    Does freezing stop it from working?

    you can freeze it w/out problems

    Keeps about 2 weeks in a fridge, 3 months frozen. Portion the block into cubes before freezing. Freezing basically puts it to sleep. Defrost in the fridge the night before you want to use it: this wakes it up slowly and ensures potency, instead of just chucking a frozen block of yeast into tepid water in one go. It's like throwing a bucket of water in your face to wake you up :D
