Hadock in Cream, Lemon and Parmesan Sauce.

    Really quick simple yummy dinner recipe (bit heavey for lunch IMHO)
    As part of a multiple course meal id serve this with just some sprouting broccoli and a lump of crusty bread, as an all in one meal (everyday stuff) I add spuds to that.

    This was shown to me by a friend's girlfriend who worked for Galton Blackiston a few years back and I think it's in one of his books too but I thought I'd share it anyway.

    When shown to me she used Lemon sole and she has also used Jon Dorey but I plumped for Hadock as the guy in the market in Galway had lovely fresh whole hadock at €10/kg and I thought this was far too cheap to turn down!

    Any firmish white fish will work fine!

    List of Ingredients:
    Fillet of White Fish (I have used hadock)
    Juice of one Lemon
    Some Lemon rind
    Two Cloves Garlic
    Some PArsley
    10g parmesan
    Some Cream
    Salt and Pepper

    step 1:
    sweat the galric in some butter in a heavey pan.

    Step2:
    Add the fish and season with salt and pepper and add the Lemon juce, a pinch of the rind and cook for about 1 minute.

    Step3:
    Turn the fish, add the cream, bring to the boul and let cook for another 30 seconds, add the parmesan, cook for further 30 seconds or untill the fish is cooked.
    Move Fish to a warm plate and add some chopped parsley to the sauce.

    Step4:
    Pour sauce over the fish and serve with some steamed broccoli and new season potatos and Ate the schtuff!
