I don't know of any courses, there is a list here of flute makers with some Irish makers listed(Eugene Lambe, Hammy Hamilton, etc). They might be some help to you.

You could try Desi Seery in Bray. He makes whistles, flutes and uileann pipes mostly from an acetate called delrin. The pipers club in Henrettia Street were talking about seting up a pipe making course in conjunction with FAS, they might have aspin off for flutes.

Plenty of stuff on the net, once made a playable flute out of a piece of wavin pipe and a wine cork

Theres been lots of discussions on whistle and flute making over at the chiff and fipple forums. If you search you'll find lots of instructions photos etc.

Was at my regular Tuesday night session last week and an american guy takes out a flute made out of the american version of wavin pipe. Sounded fine, made by a guy called Doug Tipple.

Indeed Tipple's flutes are popular, as are Guido Gonzato's whistles. Both of these guys seem to be the leaders when it comes to cheap pvc flutes/whistles and both give detailed instructions on making them. Here's Guido's site: http://www.ggwhistles.com/

    And Mr Tipples

I bought his books off him and couldn't make head nor tail of his formulae. Americans must learn different maths over there.
