    Baked spud,tomatoe and onion,simple is best as the flavor of the steak is what is important.Mmhhhh.

    In Summer:

    Boiled/steamed new potatoes with butter, salt n pepper.
    Very thinly sliced, very slowly fried onions (sort of onion jam)
    Butterhead lettuce and cherry tomatoes with homemade vinaigrette.
    Lightish red wine of choice.

    Simple Summer heaven!!

    I'd maybe stretch to some steamed green asparagus too.

    Chips and a greek salad, a dollop of english mustard and a glass of Malbec. The greek salad needs to have red onion and dried oregano in it. Somehow the flavour of the onion and herbs compliments the beef perfectly.

    Chimichurri - the Argentine sauce made from chopped parsley and garlic with smoked paprika, cumin, lemon, oregano and red wine vinegar in oil. Invented by an Irishman.

    It's an uncooked sauce. I pulse it in a blender or chop the parsley and raw garlic by hand, it's better if not a complete puree. I use a couple of handfuls of parsley, two or three garlic cloves, squeeze of half a lemon, tbsp of red wine vinegar and a tsp each of the spices and about 1/2 tsp of the oregano. Then add enough oil to make a sauce, probably 100ml.
