I should probably tell you that you'd be absolutely crazy to even contemplate doing such a thing but I'll probably end up doing the same thing myself so judging by those that haven't come up in the most amount of years, I would do:

An Fhiannaíocht
Scoileanna na mbard
Béaloideas
An tAmhrán

And if you have time:

Scríbhneoirí Gaeilge Lováin
An Ghaeilge sna meáin chumarsáide

And if you have extra time:

Ogham
na cúirteanna filíochta
An Ghaeltacht
