    Just a quick question,
If I were to a fry a chicken breast (plain breast no batter, skin remaining) in a tiny amount of olive oil how does that stand up calorie/nutritionally?
    Average size chicken breast.

Just add the amount of fat you used to the chicken breast. You need to weigh the chicken breast to know. Or divide the number of chicken breasts by the weight on the packet.

If I get a breast with a skin on I remove the skin, fry it first and the oil falls out, enough to fry the chicken in. I don't eat the skin but cooking it first also means I can bin it and it will not go off as quickly. i.e. putting raw skin in the bin in this weather will mean it can turn nasty quickly.

Most medium sized breasts are ~150g and about 110kcal per 100g.
