apple sponge/cake

    recently made some choc banada bread and was wondering if I could do the same with apples-kinda like the one dunnes do-loaf tin shape,sponge with bits of apple through. any recipes out there??

    Here's one:
    Apple – Honey Cake
    Makes 450 (1 lb) loaf


    Ingredients
    150g caster sugar
    150g butter
    3 eggs
    150g self raising flour, sieved
    1 teaspoon baking powder
    1 teaspoon ground cinnamon
    450g Bramley apples, sliced thinly, or chopped*
    50g Demerara/brown sugar
    50g clear honey, warmed


    Method:

    Pre heat the oven to 180 C/gas 5.
    Butter and line with greaseproof paper a loaf tin, muffin tray or individual moulds.
    ln a bowl beat the sugar and butter together.
    Add eggs and mix to a smooth cream.
    Add flour, baking powder and cinnamon.

    *You can add the chopped apple here if you want to have the apple through the loaf.

    Mix well.
    Pour mixture into prepared tin, tray or mould, filling only two-thirds.
    Arrange apples neatly over mixture and sprinkle over half of the Demerara sugar. *If you haven't used the apples chopped, through the mixture.

    Bake for 45 minutes (shorter cooking time for individual cakes - 30 minutes).
    Remove from oven and brush the surface of the cake with honey and sprinkle with remainder of Demerara sugar.
    Serve warm or cold with butterscotch sauce and/or sweetened cream, creme fraiche, or ice cream.

    Nyom. It makes quite a moist cake. Very nice.

    just writing down the apple cake recipe, do u put the whole 50g of sugar in at the start or to hold some back for the sprinkling

    Put all the (150g) caster sugar in and keep the (50g) demerara for sprinkling on top.The demerara gives a slight crunch to the top, but it's optional - you could put more honey on instead.
