Kitchen knife sharpening in town

    Hiya,
    does anyone by chance know of somewhere in town that will do an excellent job sharpening a good kitchen knife?

    It would be somewhere that uses a stone rather than some domestic sharpening tool.

    I don't know anywhere, but have you considered talking to a chef at any of the hotels? They value their tools above everything and would set you in the right direction...

    ahh see I don't know any chefs but did ask someone who had once worked as a chef and he suggested I find a knife sharpener and that there used to be someone who travelled around to restaurants providing the service.

    The alternative is that I stroll around town with the knife looking for a chef :p

    In serious though, I suppose I could ask the next time I'm grabbing some lunch out at Woodlands or somewhere

    Hello I am a Commercial Sharpener based in Kildare.I would be happy to do this work for you.
    I have 2 dedicated machines for this task one Sharpens Knife the second polishes.These m/c,s are the most up to date technology for this task .

    I specialise in servicing Chefs Knives e.g Sabatier,Global,Dick,Victronix etc.
    When completed the knife has a perfectly consistant even cutting edge.

    thanks man. in truth, the overall trip to Kildare and back would cost me more than the knife was worth (about 40 eurines).

    I just like a very sharp knife in the kitchen for those Fri night cooking extravaganzas when the garlic wants to be shaved.

    I'm in Dungarvan if you want me to take a look at her for you? What make and type of knife is it and what kind of edge do you want on it?

    A slicer will need a finer edge than a chopper, a harder Japanese knife can be sharpened at a shallower angle than a softer Western knife. Convex or single bevel, carbon or stainless steel.

    Would you like a toothier 1000 grit edge or a more refined and polished edge.

    What is your cutting style, are you a rocker or a guillotiner?

    If you can drop your knife in to me I can give it some attention for you, I have a few bits for doing so if you look here.
