25 g dried yeast = x g fresh yeast?

    making cinnamon buns and the recipe is 25g dried yeast but have only fresh yeast.How much should i use?

    Carve out a lump with a tablespoon and it should be about 2 x the volume of the spoon,fresh yeast can be variable IME, better a little more than less.

    The ratios are 100% fresh yeast : 50% dried : 25% instant

    So, use 50g.
