Recipes or blackcurrants?

    Hi there,

    We have a few blackcurrant bushes at home and are just harvesting this years crop. There are loads of them. Usually we just make jam but we were thinking of doing something different too. Can you juice blackcurrants? We have a fairly good juicer at home. Any recipes would be very welcome. Thanks

    Freeze some for smoothies, can be used straight from frozen. Great way to get the best nutritional value out of them without adding all the sugar to make jam. Freeze on a sheet of baking parchment in a single layer on any big tray. When frozen then scoop them up into freezer bags, really easy to use however much you want then. I make some jam but I usually make it from the frozen berries, that way you can just make couple of pots whenever you need them instead of keeping it for ages.

    blackcurrant fool
    wash the currants
    ad into a pot to simmer over a low heat til they burst and soften.
    add some sugar to take the sharpness off and stir to dissolve the sugar completely.
    spoon/pour into a wine or martini glass and chill in a fridge
    and top with sugary whipped cream.
    bonus points for adding creme de cassis if you're a non-driving adult.

    Only use fresh blackcurrants and the sugar/cream won't kill you as it's a once a year thing in this house...
