Set the email retrieval to manual, then don't use the web browser or maps, you should be sorted.

The other option is to contact your network provider and ask them to disable the data on your account (it won't work at all) then when you get home ask them to provision it on the account then.

Or cripple the access points details - i.e. if it says isp.vodafone.ie just change it to isp.dead.vodafone.ie and then you can change it back on your return.
