Hi,

Have just slaughtered two of our pigs and am looking for some good sausage receipes, or where i could find them?

I'd say you could use this basic recipe and amend it. I don't know the quantities of the flavouring, so you could start conservatively and start frying off little pieces and add as necessary.

I've tried these before and they've worked well:

Leek & sage - fry off the leeks first and let cool
Red wine, cracked black pepper & garlic
Smoked paprika and garlic
