    I always have cravings for spinach but rarely have any recipes, any interesting spinach meals that I can make?

    cannelloni stuffed with spinach and ricotta. top with a tomato sauce and a white sauce. mmmmmm

    Oven baked salmon fillets topped with sautee mushrooms, onions, blanched spinach mixed with a tub of creme fraiche. Would work without the mushrooms, too!

    Spinach and ricotta gnocchi with a sage butter sauce.

    Surprisingly easy. Very light and delicious.

    korma!

    Asian shops have little boxes of ready mixed spices. Get one called White Quorma Masala, add a bit to a can of coconut milk and throw in frozen spinach and chick peas and mange tout. Delicious and takes less time than the rice!

    If I have spinach it's as a side dish and I throw something on it.

    1. A bit of butter and a dash of nutmeg

    2. some goats cheese at the last minute

    3. A butter and pureed pear sauce

    Or its good on a ricotta and mozza pizza.

    mix chopped spinach with some ricotta cheese, sliced scallions and salt and black pepper. Slice a pocket into a chicken fillet and stuff the fillet with the mixture. wrap in parma/serrano ham and bake in the oven for about 20-30 minutes. mmmmm;)

    Spinach, drained tin of chickpeas, korma paste, heat it all up and add and natural yoghurt. Yummy!

    Have you tried coconut milk instead of yogurt? Delicious. :)

    put the spinach in colander pour boiling water over to wilt it and squeeze out as much water as possible put on one half of the omelette with grated cheese, fold it over and serve... simply mmmmm.
