    If theres a thread on this already apologies!

    Im starting college and with the recession, far too poor to eat in the UCD cafes and restaurants everyday and have tired of my dear mammy's ham-on-white-bread-with-the-crusts-cut-off variety of packed lunches.

    Any suggestions for something quick and easy to make up the night before? Even a genuinely tasty sauce to cook with pasta or a super-fast curry would do - I'm not terribly picky:)

    Why not make a blt and take it with you? Or cook some pasta with peppers,tomatoes,spring onion and put some chicken in through it. I love that for lunch best of all you can make it the night before and take it with you

    You could make pasta salad - cook pasta shapes thern rinse them under cold water. Stir in a teaspoon of pesto and a splash of olive oil, then add chopped tomatoes, onions, peppers - anything you like. Eat it with ham, tuna, checken etc.

    You could also make a big pot of soup at the weekend and bring it in a flask some days - it will keep in a tub in the fridge.
    Minestrone Soup

    1large onion
    2 medium carrots
    1 stick of celery
    A clove of garlic, crushed or chopped
    A couple of rashers of slightly smoked bacon or a packet of Aldi bacon bits
    A tin of chopped tomatoes
    1litre of chicken or vegetable stock (made with water and 2 cubes)
    Spaghetti or vermicelli pasta, broken into short lengths
    A squirt of tomato puree
    A teaspoon of dried basil
    Black pepper
    Olive oil

    Chop the bacon if using, and finely dice the onion, carrot and celery and fry in olive oil with the garlic for 5 - 10 minutes. Add the tin of tomatoes, stock, tomato puree and basil and season with black pepper (you'll need to add some salt too if you're not using the bacon).
    Bring to the boil, partly cover and simmer for 30 minutes until the veg is tender. Add the pasta and cook for a further 10-15 minutes.
