crispy shredded beef

how do you make that crispy shredded beef they do in the local chinese take aways,the recepies you get online end up being more like chewy shredded beef.how do you get it hard and crispy?????/

I've tried it many times, less the broccoli, and it's really good!

Made this the other night. The broccoli was the nicest part! Really tasty but next time I'll use light instead of dark soy and less chilli flakes
