I'm going to have to watch the Ireland v France match online tonight on RTE.ie. I'm on eircom 3mb package. I've just checked my line on speedtest and my download is 2.67mbs & upload is 0.32mbs ping is 52ms.

My question is will this be good enough quality to watch the live match later?

I woud say so, although the speed of your connection will determine the default download quality - you may only get a small sized screen

Could be a very busy server tonight , that speed is perfect for the RTE player and Oireachtas TV BTW
