salad dressing no vinegar or lemon juice

    Ive started a food allergy diet first 6 weeks are basic detox im off vinegar and lemon juice( or any other citrus fruit) and all dairy among other things, list to long to go into!! need to find a salad dressing but dont think its possible to make one without lemon juice or vinegar?? any ideas??

    Seriously though...that's a toughie.

    My first thought would be to go with a variation of our usual "house" dressing.

    Use some dijon mustard, crushed garlic, oil, a splash of water, salt, pepper, and maybe some chopped herbs.

    I'd still go with using a mustard, oil and water base....adding herbs.

    If you have them at hand, using nut oils instead of (some of) olive/sunflower/whatever oil, you add another flavour dimension.

    You could go oriental...going with soy, sesame oil, maybe some ginger (if that's not out) and chilli.

    The other sour ingredient you can try as a substitute for vinegar is a japanese by-product of the production of Umeboshi plums. Ume Plum Seasoning is a brine liquid with a sharp tang. The one I have is made by Clearspring - try an oriental supplier for it.

    Wholegrain mustard, a little oil, honey and black pepper.

    Also try pomergranate molasses - a sweet sour syrup that is middle eastern is origin. Normally used as a cooking ingredient or in marinades - it could be used as a sour ingredient in dressings.

    BTW most mustards are made with vinegar - for which you are allergic - you could try making a mustard paste by grinding yellow mustard seeds and water. It won't keep for any length of time so make it fresh each time. Then add that to oil for a dressing.

    The other alternative sour ingredient from oriental cooking that you could try is tamarind paste.

    Invest in a really good olive oil. It will be fantastic with some salt & pepper on your salad. And it will last for ages if you just use it as a condiment.
