There's a few websites I've come across that may be of some help to you:

    http://www.trailriding-ireland.com/

    http://www.irelandby.com/activities/riding.htm

Most places facilitate and accommodate beginners. Just mention it to them when you are making the booking and they'll be able to advise you.

There are also quite a number of trekking/equesrian centres in the south; if you google horse trekking in Ireland you get a large number of (helpful) results!

Came across this, too. It may help to give you an idea of price range:

    Best of luck!

Great trekking place in Tramore, Co Waterford. They take treks around lakes, to the beach or to the forest. Horses really good for all levels. I go there once a month, its for all levels beginners to advanced. They have website www.laketourstables.ie on Sunday they do 2 hour trek passed lakes, through forest, to the pub for a drink, back different way by lakes and xcountry jumping if you want to jump or a 2 hour trek to beach 4 mile gallop along Tramore Beach - brilliant!!
