Looking for recipe for Cod Fillets

Hi,

I have a bought 2 fresh fillets of cod and looking to do something with them. I don't want to do a big heavy sauce and ruin the fish but looking for a way to keep it fairly fresh and light and adding some nice flavours to it,

All ideas appreciated..

I've done this a few times and it's very tasty. Doesn't kill the fish with sauce either and it can be done in the oven in less than 15-20 mins too. Nice with some french beans.....

what i love to do is pan fry the cod, and in a seperate pan saute some diced potates till crisp, add a clove of garlic, some diced chorizo, allow the oils to come out of the sausage, add a little paprika and some seasoning, then add some pre cooked baby spinach, add a little lemon and olive oil
