Kitchen Knives

    I just signed up for a cookery course and need to buy my own knives.

    Does anyone have any recommendations for a basic starter kit? Brands, supplier, prices etc?

    I agree with HB...but...short version...

    Victorinox...best compromise in the whole "price-performance" for a starter...and they can last you a lifetime if you're happy with them. Alternately, it won't break your heart to hand them on to someone else if you go upmarket later.

    Chefs knife - a must.
    3" Paring knife - almost certainly a must.

    Everything after that is pretty-much optional.

    I got Prestige Knife block as a gift earlier in the year. It came with a sharpener device too. They are really useful so far

    I'm using the fancy IKEA ones right now (having usually used Judge-Sabatier). I'm very happy with them so far (though it's early days). I agree, a good cook's knife and a paring knife are most important. There may come a time when a boning knife is useful. Two very important pieces of kit: a 'sharpening' steel and a whet stone (and learn how to sharpen properly).

    A large Chef knife, a parer and a carver/bread knife are generally the minimum set. You probably will never need more than that for 90% of kitchen duties.

    Mora do a range of kitchen knives which should be good, their 12C27 steel is good stuff.
