    Katsuobushi kezuriki

    Katsuobushi_kezuriki.jpg

A traditional Japanese kitchen utensil, similar to a wood plane or mandoline. It is used to shave
katsuobushi, dried blocks of skipjack tuna (katsuo).

The technique used to prepare the cooking ingredient is pulling and pushing a block of katsuobushi
across the blade in the device in a back-and-forth movement. The resulting shavings are captured
in a wooden drawer at the bottom of the instrument and retrieved by opening and emptying the
shavings that are roughly sorted into two sizes for different uses.

    Oroshi hocho

    800px-HanchoHocho.Tsukiji.CR.jpg

Extremely long, highly specialized knives used in Japan to fillet tuna and other large fish.

The oroshi hocho is a longer knife with a blade length of 150 cm (60 inches) in addition to a 30 cm (12 inch) handle. It can fillet a tuna in a single cut, although usually two to three people are needed to handle the knife and the tuna. The flexible blade is curved to the shape of the spine to minimize the amount of meat remaining on the tuna chassis. The hancho hocho is the shorter blade with a length of around 100 cm (39 inches) in addition to the handle. The hancho hocho is also sometimes called a maguro kiri ("tuna-cutter").

    Vacuum Sealer

    85_18_75780771.PNG

Vacuum packing is a method of storing food and presenting it for sale. Appropriate types of food are stored in an airless environment, usually in an air-tight pack or bottle to prevent the growth of microorganisms. The vacuum environment removes atmospheric oxygen, protecting the food from spoiling by limiting the growth of aerobic bacteria or fungi, and preventing the evaporation of volatile components. Vacuum packing is commonly used for long-term storage of dry foods such as cereals, nuts, cured meats, cheese, smoked fish, coffee, and crisps. It is also for storage of fresh foods such as vegetables, meats, and liquids such as soups in a shorter term because vacuum condition cannot stop bacteria from getting water which can promote their growth. Vacuum packaging food can extend its life by up to 3-5 times.
