    Does anyone make their own, and if so can you please share your recipe ;)

    I make a potato mash, mix some finely chopped onion through it.
    Chill.
    If necessary (if its too wet or sticky) stir some flour through it.
    Form into croquette shapes, then do the whole milk/flour/egg/bredcrumb coating thing.
    Chill, again.
    Deep fry, at about 160 or 170, until golden.

    If the mix is too wet, or the oil too hot, then they'll burst when cooking.

    we use crushed corn flakes instead of breadcrumbs
    Not sure who came up with that idea but it's a Christmas dinner staple ;)

    Boil potatoes, mash.
    In a saucepan add a little milk and finely chopped onions, place on a low heat until soft. (Too much milk will make the mash rolls fall apart)
    Add this to the mashed potatoes and leave to cool.
    (We often do this the day before, if it's too hot the coating will get soggy)

    Make mashed potatoe into little rolls.
    Add some milk to 1 bowl and crushed cornflakes to another.
    Dip each potatoe roll in the milk then the cornflakes.

    Yum yum yums :D

    a common mistake when making croquettes is boiling them first, dont do that, bake the potato in the oven with a layer of salt underneat, this will give you a dryer better mash, also some spring onions and buttered cabbage in the mix is great, once the mix is ready, shape them and put them in the freezer, then breadcrumb them

    Use an egg yolk in the mix, this will bind the potato nicely but dont use milk or flour if you use the egg yolk has the mix will become very sticky and hard to handle.I like to work with the mix when it is still warm.
    1 egg yolk to 250 gms mashed potato approx.:)
