I've been playing FM for years now but never got too involved with the whole training process but feel like I really should try to get to grips with it now.

Any suggestions for a good starting point etc?

Usually what I do is make 5 training systems, Goalies, Defenders, Defensive Midfielders, Attacking Midfielders and Strikers. I tailor the system to the skills required for each position. Example strikers have intensive attacking but little defending. I've found it works pretty well for me

    I break it down to:

    Goalkeeper
    Full Backs
    Centre Backs
    Def. Mids
    Centre Mids
    Wide Mids
    Att. Mids
    Wingers
    Tall Strikers
    Fast/Skillful Strikers

Yea I've actaully set mine up quite like this.

And just on the coaches thing, how many coaches are ideal?

    It depends on your team.
