Chili Cheese sauce

    Thought I'd share my version of this simple and common recipe. I've been playing with this for a while and tried a few spices a bought in Marks and Sparks recently which made a huge difference.

    Ingredients
    •4 tablespoons real butter
    •3 Tablespoons flour
    •1 Tablespoon of MS smoked sea salt
    •1 Tablespoon of black pepper
    •1 1/2 cups of full fat milk
    •2 cups grated mature cheddar
    •1 Tablespoon of MS Smoked Paprika, Sweet red pepper and Thyme powder
    •1 Teaspoon smoked paprika
    •6-8 chopped green chillis seeds removed


    Directions
    1.Melt butter in pot on a medium heat.
    2.Remove from heat and stir in the flour.
    3.Return to heat and cook for 3-4 minutes, stirring constantly so flour doesn't burn.
    4.Turn heat down to low and slowly stir in the milk.
    5.Add the spices, paprika, salt, pepper and chopped chilli.
    6.Cook for another 2-3 minutes while constantly stirring.
    7.Slowly stir in the cheese a bit at a time letting it melt as you add it.
    8.Let it cook for another 3-4 minutes, constantly stirring, to let the spices mix with the cheese.

    Great as a dip or on Meatballs!!
