Where can I find out about regs on commercial kitchens with regard to windows/ ventilation/ fly screen requirements etc

I work in the window business and a friend has asked me to replace a timber window in his kitchen with an aluminium sliding hatch. At the moment, the window is not used. It currently opens out into an open but roofed area that he plans for open air dining. The hatch would be for tending this area eventually.

He did bring up the subject of fly screens and mentioned that you can't have open air getting into the kitchen. I thought that that was basically what he had now.

Any ideas as to how this can be solved?
