    right, looks like im cooking for herself sunday and im looking for a brainstorm. so far, the only clues about dinner are that she wants the dinner to be healthy(not too fussed about that :D, taste is more important imo) and that she'd like something with chicken for dinner.

    so im thinking i might buy a chicken and use it for main course and stock for a starter soup and then something choclately for dessert :)

    How about a delicious Chicken and prosciutto ham dish?

    Preheat your oven to 200 degrees C.

    Get 2 big chicken breasts,prosciutto ham, goats cheese and some pesto. I recommend getting all of the above from aldi because it's much cheaper and they have a delicious walnut and ricotta pesto that goes so well with this dish.

    Get some tin foil. Butterfly the chicken breast. Fill it with sliced goats cheese (or camembert if you dont like goats) and drops of the walnut pesto. Fold over the chicken so it's a pouch. Now line the tin foil with ~4 slices of prosciutto ham in a row, put the chicken pouch in the middle and roll the ham over the chicken, like a blanket. Finally roll up the tin foil all around it into a tight parcel. Do the same for the other breast.

    Bake in an oven proof dish for ~35-40 mins until the chicken is oozing.
    Perhaps make mashed potatoes into a heart shape and spear some asparagus through it like an arrow for dramatic effect?

    Serve something chocolatey for dessert!

    sounds nice, that would be easy enough, reasonably quick and could be prepped right up until it needs to go in the oven.
