UNLOCKING Samsung Pixon 8000- Downside

I have a smasung pixon and want to unlock and use another pay as you go like o2. If i unlock this phone from vodaphone bill and use say tesco or o2 sim card can i still use the applications on the phone such as google maps and GPS on google maps. Is that still going to function. I would be surprised and curious as to how…
