boiling a duck egg = rubbery

    Every time I try to boil a duck egg it turns out YEUCH. What's the right procedure to get a firm white and a semi-runny yolk?

    Same as a hen's egg. Maybe you're cooking them too long.

    ok,with a hen egg I put it in the pot of cold water,let it come to the boil,cook for 3 mins and 'voila' I have an egg just the way I like it. This doesn't work for a duck egg. Why?

    As above but for 4 1/2 min instead of 3.

    They do have a denser texture than hen eggs. Personally I love it; mmmmm, rich yolk...
