I've a pepper that I'm going to stuff with cous-cous but don't know what else. Suppose I could just root around the fridge and throw in bits and bobs but I wanna see other people's recipes. What's nice with a stuffed pepper?

cous-cous, sun dried tomatos, roast aubergine, garlic herbs is my fav

else grate carrot, courgette, bean sprouts. stir fry and fill. My friends make it this way (although personally I like some carbs in there)

I tend to put in any thing left over in the fridge from rice/risotto to left over spag bol sauce (which is yum). Always topped with grated cheese.
