    What is it in cookies that makes them crispy
    * Butter
    * Sugar
    * Flour
    * Eggs

    I am trying to make a good crispy gluten free cookie but they are never crispy and I am wondering what is it that makes them nice and crispy!!

    Try using caster sugar instead of brown sugar. Leave to cool fully on a wire rack. Roll them thinly.

    Are you using a European recipe or an American one? Americans like soft cookies - we prefer crispy ones - you can also leave them in the oven a little longer to crispen then up a bit.
