Just wondering if anyone can advise on lighter summer meals that I can make in a slow cooker. I use it a lot as I work long hours and by the time I get home I can't face making anything more than a sandwich! I'm not a fussy eater, I'll eat most things but I've only had the slow cooker for about 6mths so have only been making roasts, casseroles, stews, curries, etc. Now that the weather is finally starting to get better I just want some options for a lighter evening meal that will still be ready when I get home!
