Yeah, I suppose it would be a good idea to do that. I usually leave them at default/lose timings when installing. Whatever you do, don't overclock before you install the OS.

Different boards have different BIOSs, so keep that in mind. It will be in the manual anyway.

another video i watched told me that i have to go to my drives in the bios and make sure that i select my optical drive for my first boot as that will pick up the windows cd to install windows after that i can uncheck it as windows will be installed on the hdd, also could anyone give me a comprehensive guide (preferably with pictures) as to where the main power cables go into the mobo as this seems to be the main reason people cannot get their first build to boot

Yeah, reset the bios before you begin and you set the dvd as the highest priority for booting (or sometimes it'll check the DVD anyway). Just remember to switch it to your hard drive when windows reboots the first time, otherwise it will go back to installation again.

If you go down the RAID-0 route with something like 2x1TB drives, I'd recommend that you partion the drives to get the best speed for your games. You can do this in the installation stage, if you select custom installation. It will tell you that you have ~1.86TB and you can split them up as you choose. You can change this in windows itself (you can delete a partition or add and resize the one at the end) as long as there's nothing on that partition. During the installation phase you should give a minimum of say, 50GB to the c-drive (if you don't plan to install much on the c-drive) or 600GB (~30%) if you're going to have a lot on there. You can add the rest of the partitions later. You know better how your files will be organised.
This isn't remotely necessary really, but it depends on how much effort you want to go to.

    PSU connectors.

You need two for your motherboard - the 24 pin and the 8 pin (20 pin and 4 pin on older/low power boards).

Your graphics card will need 6 pin and 8 pin (unmistakable with PCI-E usually on them).

SATA on the left for drives. Molex on the right for older drives, sometimes fans and other miscellaneous.

Don't worry about it. It's just lego. It practically builds itself. There's the whole internet to ask if you get stuck. I had a look around and a lot of the guides are terrible or old, so you'd be better off just reading the manuals. Download them while waiting for your stuff to ship!
