    hi. Whats it called when you bone out and roll a rack of lamb? There is a name for it. Any1 know?

    Are you sure thats it? I tought there was a differant name for it!! I just wrote rolled lion of lamb on the menu!

    I'm pretty sure but I prefer your description!

    Most people will know what a rolled loin of lamb is but not so many people will know noisettes.

    eh no iut aint, Lamb noisettes are a fancy name for pieces, or collups, of the fillet of the lamb

    And the fillet is what exactly?

    The eye of the loin! Or the top end of the leg (in Ireland).

    Look at the image link I posted above for noisettes - they are all boned and rolled loin.

    What you are referring to might be called medalions
