Hotel stay torn between two

Hi. We're going to the Michael Buble concert Friday week. What hotel would anyone recommend for a nice stay for a couple, dinner and a few drinks after show. Shelbourne or Dylan. Which would have the best buzz?

Any advice appreciated.

Dylan, more fashionable, better food, but prob not as lively afterward

Shelbourne includes just breakfast.
Have reservations for Marco Pierre White Steakhouse also.
More expensive than Dylan.
It's fully booked now and have been there before and enjoyed the bar afterwards.

Dylan slightly cheaper and includes Dinner and Breakfast.
That's practically booked out.
Haven't stayed here yet.
Am at a loss.

We are a quiet couple, mid thirties, are leaving the children at home for the night and want to unwind after concert, have a chat, drink and love to 'people watch'.
