    I had smoked salmon and cream cheese with babyleaf salad and some leftover roast chicken.

    Bit of a whim but I lined a ramekin with 100g smoked salmon, then filled it with a mixture of 50g cream cheese, some lemon juice and fresh chives. Folded the salmon over the top and left in the fridge overnight. Had a lovely wee parcel of deliciousness for lunch!

    Pastryless quiche with roasted butternut squash, onions and smoked bacon in it. Best bit was my husband made it yesterday so I just had to take it out of the fridge. It was delicious

    Nothing that exciting- Ham, lettuce, cheese, red onion, tomato, gherkin sandwich on Brennan's bread, with a bowl of Baxter's Minestrone soup.

    A pepper, tomato and onion omelette with a little bit of cheese and parsley with some extra pepper slices on the side - it was delish! Didn't take a picture as I fecked up taking it out of the pan

    Went to my parents today and Dad made me a lovely dinner.
    Corned beef, home made roast potatoes, cabbage, sprouts, carrots, peas, some leftover chicken (lol) and a Yorkshire pudding.

    I made spaghetti bolognese today for lunch. Stuffed now.

    Used a jar of Lloyd Grossman bolognese sauce, some cayenne chili powder, crushed chillies, smoked paprika, 'normal' paprika, dried dill, dried rosemary, dried parsley, dried oregano, dried sage, dried basil, celery salt, pepper, dash light soy sauce, dash worcestershire sauce, 1 tablespoon balsamic vinegar, garlic olive oil, tomato puree, garlic puree and I don't know what else. It was delicious and not overly spicy either.

    Free range omelette with fresh herbs with a dash of Frank's hotsauce.
    So simple and extremely tasty.
    Little bit of salad would have been nice but I was in a rush out!

    I defied Good Friday utterly by having a big durty fillet steak, mashed potato, fried onions and pepper sauce :D

    Lunch was dinner today as the OH had to leave this afternoon. Stuffed now!

    Getting bored with bread lately so I decided to have a salad.

    In a bowl, I threw in chopped iceberg lettuce, sliced gherkins, quartered vine tomatoes, sliced strips of red and yellow pepper, chunks of cucumber, grated carrot, tin of tuna, a dash of Balsamic vinegar, sprinkle of dried oregano and parsley, mixed it all together and had that with two cream crackers.

    Was really tasty.

    For lunch yesterday I scoured the cupboards looking for something tasty (shopping day was today!) and made up my own recipe.

    In a pan, I fried some onion and garlic, added a tin of chopped tomatoes, a mix of spices (ground paprika/oregano/garam masala/basil/curry powder/chilli powder/pepper/salt), dash of balsamic vinegar, tablespoon of tomato puree, half a tin of mixed beans and simmered until reduced.

    Stirred this into some fusilli and topped with grated cheese.

    It was really nice, just the right amount of spices and really filled a gap!
