    Want to make a really flavoursome, creamy chicken dish to serve with pasta. Any good recipes out there?

    Pasta chicken alfredo. Tesco used to do a pierce & ping version of this that I bought occasionally for lunch at work. It was simple to make at home so a quick scan of the ingredients on the packet and this is what I came up with. Serves two.

    You'll need two chicken skinless breasts, a jar or Schwartz Piri piri spice, a bag of baby spinach, a handful of white mushrooms, half an onion chopped finely, a little garlic, a glass of white wine, some double cream, some grated parmaesan cheese. Pasta of choice - I use fusilli.

    Start by scattering the piri piri spice over the chicken breasts and bake for 20 minutes in the oven at 180c. Cook the pasta in a large pan of salted water. In a large frying pan, wilt the spinach - just add the leaves to the pan and turn on the heat - in two or three minutes it will all have wilted. Remove from the pan and allow to cool. Add butter and a little oil to the same frying pan and soften the onion for a few minutes. Add the sliced mushrooms and chopped garlic and cook on a medium heat for a few minutes. Turn the heat up high and add the white wine. Reduce and add the cream, cook for a minute or two and add the cheese - taste, season with salt (no pepper) and allow to thicken a little.

    Slice the chicken, squeeze the spinach to remove the water and roughly chop, drain the pasta. Add everything to the sauce and mix to coat all the bits. Serve.

    How about some chicken with chorizo and red pesto

    Ingredients: 2 chicken breasts diced,
    2-3 inchs of chorizo chopped,
    1 red pepper,
    1 red onion,
    1 clove of garlic,
    chilli (to your taste),
    1-2 tb spoons of red pesto,
    2 tb spoons of cream cheese (eg philadelphia) or creme fraiche,
    salt and pepper to taste

    Add the chorizo to a dry pan and fry (the fat from the chorizo melts out and will be enough!), add the chicken when the chorizo oils start to run and fry. Then add all the veg, chilli and garlic. When the veg is cooked a little, add the pesto and cream cheese/creme fraiche and stir in well. Add salt and pepper to taste and serve with any pasta you like. :)
