Steaming Fish in Tinfoil Parcels

Tried this for the first time last week...

Sea Bass
Soy Sauce
Garlic
Ginger
Chilli
Spring Onion
Coriander

20 mins @ 180c in the oven.

Pretty good, fish was beautifully cooked and really well flavoured. Made it again the next day but used a little less coriander this time as it can be very dominating flavour wise.

Anyone any other recipes similar to this?

a bit simpler: two thin slices of lemon on the scales, then, inside the fish (where the intestines used to be) I would put some parsley and one or two gloves of garlic. Sprinkle with olive oil and bake for 20 minutes (in tinfoil)

Mmm, ramsons - we have huge banks of them a stone's throw from the house, did well out of them last year but missed them this year.
