    Don't know bout anyone else but Saturday nights in the our house have changed since baby rylie came along. Gone are the nights out and in their place is X Factor/Curry night. Love this curry recipe so I thought I'd share...

    It seems a bit fiddly and long winded but I promise it's well worth the effort.

    2 or 3 onions chopped
    2 tsp cumin seeds
    1 tsp mustard seeds
    1 tsp coriander seeds
    2 tsp medium curry powder
    6 cloves garlic chopped
    3 red chilli, deseeded and chopped
    1 red pepper chopped
    4 chicken breasts chopped
    1 tin tomatoes
    1 tin coconut milk
    1 tsp mint sauce
    1 tsp garam masala
    loads of fresh coriander.

    Toast the seeds in a frying pan, grind them in pestle & mortar
    Fry the onion and garlic until soft, add the ground spices (if this gets a bit dry you can add a spoon of juice from the tin of tomatoes)
    Add the curry powder and the chopped chicken and fry for 5 mins
    Add the chillis and red pepper and cook for another 3 or 4 mins
    Add the tin of tomatoes, coconut milk, mint sauce and let it bubble away for 35-40 mins (the longer the better really)
    Add the garam masala about 5 mins before the end of cooking time.
    Just before serving add the fresh coriander.
    This is gorgeous with brown rice.
