Certainly harvest it before it bolts, a lovely veg.

Some types are tougher than others when dealing with frost, I grew an Italian bulb type this year, but it bolted in the last 3 weeks - I was curious how it would deal with frost, but now I am just collecting seed and fronds for herbs and next years crop
