Chicken and Bacon wrap with saute potatoes

    For two hungry people or one greedy b'stard.

    4 Chicken Breasts
    8 lengths streaky bacon
    Several New Potatoes
    Onion
    Butter
    English Mustard
    Black Pepper
    Garlic cloves
    Mushrooms
    Olive oil

    Start by steaming new potatoes and allow to cool.

    Pre heat top cooker.

    Take a small ramekin dish and add a large tablespoon of butter, a teaspoon of mustard add black pepper and a clove of chopped garlic - mix into a paste.
    Make an incision in the breast at the thickest point and fill the aperture with said paste. Take 2 lengths of streaky bacon and wrap them tightly round the breast, if needed tie with string. Repeat for all breasts.

    Add oil to frying pan heat to max and add breasts, place lid on pan turn down leave for 4 mins and then turn over for another 4 when the chicken and bacon are part cooked. Remove breasts to overproof dish and sling in the oven for about 15 mins at 200c

    Chop up potatoes, slice and dice onions and mushrooms. Add onion to the frying pan followed by potatoes and mushrooms and saute with the lid on until pleasingly smelly! :) Mix about a bit so its all just short of being burnt.

    The chicken breasts should be cooking away in their own juices and the buttery/mustard mix, remove dish and cut through the thickest breast to check its cooked through.

    When done throw contents onto plate and nosh.
