Leftover rice - what to do with it?

    Folks - I made curry last night, and cooked far too much rice, so I've a good dose of it in the fridge (can't bring myself to throw it out!).

    Any suggestions as to what I might do with it? It's boring basmati, btw.

    Turn it into fried rice! It's actually much better to use already cooked and cooled rice.

    Freeze it, then you'll have lovely quick rice next time you're having a curry.

    Also worth mentioning that left over boiled rice should be used within a couple of days and should be heated throughly prior to consuming as it is one of the leading causes of food poisoning.

    Thanks all, late reply, but I made fried rice the next day - very successful, and a great idea!

    A bit late, but for to keep in mind, you could also make rice pudding with it. (Basmati is a lovely sweet rice so I think would go nicely in rice pudding)

    My mom always did that with leftover rice, cooked it up with some cornflour, sugar & milk, then put it in little bowls in the fridge sprinkled with cinnamon. You could add raisins too!

    Here's one for the next time - Fritters

    Make a sweat batter (you know how, right?)
    Add the rice
    Deep fry and serve with Vanilla Ice Cream


    You can always do this savoury - think oinion bhajis and yer there.

    Ugh, don't fancy the sound of that:eek::eek::eek:


    Another thing to try with left over rice is Congee or Jook.
    Just boil up the rice with chicken stock, lots of sliced ginger and some garlic.
    Add chopped spring onions and soy sauce to serve.

    It is basically a savoury rice porridge and is the ultimate Asian comfort food!
    You could add any other ingredients you like too - mushrooms come to mind.
