Cheesecake (a bit lighter or economy version!)

    250ml Single Cream
    Pack of any flavour Jelly you like
    225 (use less if you want) pack of Philly (room temp/not block hard from fridge) (and yes you can use Light stuff if you want)
    Medium tin of any flavour fruit you like
    150g any flavour biscuits you like (use less or more if you like)
    1 generous table spoon of butter/stork/or spreadable stuff suitable for baking


    Crush biscuits, add melted butter, push into average round cake tin. Chill in fridge for about 20 mins. You probably know the drill.

    Cut the jelly into squares, add the juice (only) of your tinned fruit to small saucepan. Melt together, stirring gently over a low/medium heat, only takes a few mins. Transfer to a bowl to cool while you get on with cheese cake mixing.

    Cream the philly in a bowl using a spoon and add the cream, mix together with a baloon whisk till smooth and resembling a milk shake. You can add crushed tinned fruit at this stage if liked.

    OR

    Use a food processor and blitz the philly, cream and tinned fruit (if liked) till it resembles a milk shake.

    Simply add the cooled jelly liquid to the milk shake and pour over your chilled biscuit base. Return cake to fridge land leave it to set for 2 hours maybe less if you are dying to eat it...

    A little grated chocolate (cheap or fancy) be sprinked on the top to serve and indeed the fruit can be served with the cake (if you did not blitz into cake) for those who like it.

    By varying the fruit jelly/tinned fruit/biscuit combination you can make any flavour cheese cake you like. It can be as posh or as economy as you like. Be imaginative and enjoy.

    If it's real economy you want, and an incredibly simple cheesecake, try this!

    I use four small dessert bowls, and make individual cheesecakes, which looks very fancy!

    Same ingredients as above:

    150g crushed biscuits, mix of digestives/choc. digestives/gingernut - whatever is in the press!
    50g of melted butter.
    So far, about 30 cent!

    Mix biscuits & butter, and spoon into bowls. Don't press it down too firmly, or it will set rock hard! Put in fridge for 15 - 20 mins.

    1 tub of Tesco Extra Light Soft Cheese/250g - 69 cent.
    1 pack of Tesco Strawberry/Orange/Lemon Jelly - 29 cent.

    Put cheese into bowl, and break up into a smooth blob.
    Break up the strawberry jelly in a jug, cutting each cube in two, and add 200 ml of boiling water. Stir until completely dissolved.
    For a really firm cheescake, add 100 ml of cold water.
    For a softer cheescake, add 200ml of cold water.

    Blend jelly into soft cheese, using a balloon wisk, and then pour mixture into each bowl.
    Chill in fridge until firm.

    Done! :D

    Total cost: under €1.30!

    Not a fancy recipe, and not very technical, but a sure winner with the kids!
