The Canadian Embassy would be a good place to start.

Getting a visa depends on your age and your skills / experience / qualifications.

There is an under-35 working holiday visa you can get through USIT, but I'm not sure how this would apply to bringing kids etc.

Try emailing info@usit.ie or visit http://www.usit.ie/work-abroad/canada/work-and-travel-canada-2011/eligibility

You can also apply directly to the Canadian consolate yourself for a variety of visa types. These can take up to a year to process though (and it appears the USIT Canada programme for 2011 is full also, so you can join a waitlist and in about 10 months you will get a visa).

The most common visa to emmigrate with is a skilled worker visa: http://www.cic.gc.ca/english/immigrate/skilled/apply-who.asp

Navigate that site for the different types of visas on offer and how to apply. Best of luck!
